Suyo x Bar Haifa: Con Amigos Chef Collab Series

We were recently invited to attend a collaboration dinner at @suyorestaurant.  This particular dinner was hosted by @chefricardovalverde at Suyo and chef @jasonhemi from @barhaifa.  We were impressed by how the chefs were able to meld their two different styles and cuisines to create a cohesive dinner ❤️. Each course also had a drink pairing which we also thoroughly enjoyed 🍸🍷. They won’t be having another dinner exactly like the one we experienced but…

Chef Ricardo Valverde and his team have put together a series of dinners called “Suyo con Amigos”.  Chef Ricardo will be welcoming friends from the Vancouver culinary community into the Suyo kitchen to offer up one of a kind, one night only dining experience to guests.  This year’s line up includes chefs from @elisasteak, @wildlightrestaurant, and @masayoshisushi.  You can reserve seats at their upcoming dinners now!  We can’t wait to see you at the next event 🤗

Paramo Cocktail: Paranumbes Rum, Gentian and Cantaloupe

Canopy Cocktail: Cazadores blanco, mezcal, bergamot, capsicum distillate, and cherry blossom.  We had two cocktails because one of us is allergic to cantaloupe 🍈. We liked the canopy better.  It was a very well balanced and tasty cocktail 🍹


a. Kibbeh torpedo, lamb, pine nuts, bulgar, amba tahini
b. makdous, baby eggplant, labneh, preserved lemon (this was great when eaten together with the lamb)!
c. aji de gallina empanada, foie gras, aji amarillo (you can’t taste the flavour of the foie but it definitely adds a richness to the dish 🤤)
d. dungeness crab causa

Scallop Tiradito (Suyo): Cucumber leche de tigre, andean furikake – this was made from fresh east coast scallops and the stand out dish for us 🌟🌟🌟 this will likely become a permanent dish on Suyo’s regular menu.

Drift Cocktail: Allborg Akuavit, green apple, clarified milk (we love clarified milk drinks because they are so smooth!  This was was no exception)

Charred Cabbage (Bar Haifa): Tahini, nut duqqa, chickpea chili crisp

2022 Alderlea Bacchus: We loved this wine with the cabbage!

Beef Heart Anticucho (Suyo): pastel de choclo, haifa’s hummus (surprisingly tasty and not gamy!)

2020 Tacama Don Manuel Tannat: A perfect red with the beef heart!

Shawarma Braised Lamb Shoulder (Bar Haifa): Lamb shoulder with Suyo’s smoked celery root puree, and seeded duqqa. This was another standout dish… lamb was perfectly cooked and the celery room was the perfect accompaniment….so delicious!! 🤩

2019 Zuccardi Cabernet Sauvignon: Another wonderful pairing to complement the lamb perfectly. 


Knafeh (Bar Haifa): Ricotta tart, saffron syrup, and toasted pistachios.

Oro Cocktail: Bacardi. Ocho, Granite Amaro, Gold Ore (this one has pop rocks!)

Lucuma Parfait (Suyo): Pineapple compote, vanilla cake.

Mignardises: Rose water macarons, halvas, pecan choco tejas

PS… They have little lamas hidden in the restaurant! We found one sitting in a bush beside us. When you go, see if you can spot them all!
