Frozen Watermelon Margarita

One of our 2021 New Year’s 🎉 Resolutions was to keep the fridge and freezer clean!  So we cleaned out the freezer yesterday… and found some 🍉 watermelon 😬 we froze during the summer ☀️ One of our favorite ways to use watermelon is to make… watermelon margaritas 🍹 (even in the middle of winter ❄️🥶)

Ingredients

For the Rim

1 tbsp Corse Kosher Salt
1/2 tbsp Sugar
Lime Wedge

 

For The Drink

2 Cups Chopped Watermelon
1 oz Lime Juice
2 oz Silver Tequila
1 oz Triple Sec 
2  Watermelon Slices for garnish
2 Lime rounds for garnish

Instructions

  1. Cut watermelon into 1" squares and freeze overnight in a ziplock bag.
  2. Mix the salt and sugar on a plate.  Put a small slit into a lime wedge to wet a 1 cm strip around the rim of your glass.  Rotate the rim of the glass in the salt and sugar mixture until the rim is evenly coated. 
  3. In a blender, combine the frozen watermelon, lime juice, silver tequila, and triple sec.  Blend until smooth.
  4. Pour into the rimmed glass and garnish with a lime wheel and slice of watermelon.

Notes

Enjoy watermelon margaritas year-round! Since we can never finish a full watermelon before it goes bad, we love to freeze our watermelon in the summer so that it's ready for blended drinks year-round. If you freeze your slices into wedges, you'll also have the perfect pieces for garnish for that perfect winter blues drink.
