Looking for some easy #salad 🥗recipes for #MeatlessMonday 🤔 Try this watermelon 🍉 mint and feta salad (recipe by @toriavey)  along with this arugula, fig, and prosciutto salad (recipe by us)!  Leave out the prosciutto if you like – of course 😉

Arugula and Fig Salad with Prosciutto

Serves: 2 Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

2 cups of arugula
3 figs (quartered)
3 strips of prosciutto (torn apart)
0.5 cup of fresh mozzarella (torn apart)
olive oil
salt
pepper
balsamic reduction

Instructions

  1. Dress the arugula with olive oil, salt and pepper;
  2. Place dressed arugula on a platter and arrange figs, prosciutto, and mozzarella on top; and
  3. Drizzle balsamic reduction over salad and serve.
