We are cooking up a light meal today with these tasty flavourful Asian flavored lettuce wraps ūü•¨ Thanks @ChrissyTeigen for the recipe ‚ėļÔłŹ¬†

This dish is also great for an appetizer if you are having friends over! For the filling, we have used ground chicken, but the recipe also works great with ground pork.

Chicken Lettuce Wraps

For the sauce:

3 tbpsns of Thai sweet chili sauce
3 tbspns of hoisin sauce
3 tbspns of light soy sauce
3 tbpsns of sriracha
2 tbpsns of vegetable oil
1.5 tbpsns of rice vinegar
2 tbspns of minced garlic
1 tbspns of minced fresh ginger

For the Filling:

1 pound of ground chicken
3 tbpsns of vegetable oil
8 green onions, thinly sliced with white parts and green parts kpet separate
1 tbsp of minced fresh ginger
1/2 pound of white mushrooms, cleaned and finely chopped
1/2 cup fo finely diced water chestnuts
1 small red bell pepper, finely chopped
2 heads of butter lettuce leaves - separated


Making the sauce

In a bowl, mix together all the ingredients.

Making the filling

1. Mix together 2 tbsp of sauce with the ground chicken.

2. In a large skillet, heat 2 tbsp of oil over medium-high heat.  When shimmering hot, add the chicken and cook, break up the meat, cook until browned.  Approximately 5-6 minutes.  Transfer meat to a plate and set aside.

3. Add the remaining 1 tbsp of oil to the skillet, then add white parts of green onion, garlic, ginger, and cook for 1 minute.  Add mushrooms, stir until they release the liquid for approximately 3-4 minutes.  Return the chicken to the pan, add the water chestnuts, bell pepper, the rest of the sauce, and cook.  Cook until the liquid has reduced and slightly thickened.  Stir in green parts of green onion

4. Transfer to a bowl and serve with lettuce.
