The weather turned cold 🥶quickly in #Vancouver.  Soup 🥣is the quickest way for us to warm up!  So we prepared this healthy healing cabbage 🥬soup filled with lots of veggies 🥕🧅🍅. It’s quick, easy, and such a comforting meal!  Thank you @allrecipes for the inspiration!

Healing Cabbage Soup

Ingredients

1 tablespoon and 1-1/2 teaspoons olive oil
1/2 onion, chopped
1 medium carrot cubed
1 stalk of celery cubed 
1 clove garlic, chopped
4 cups chicken stock
1 tspn of dried basil
1 tspn dried oregano
red pepper flakes (to taste)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
1/4 head cabbage, cored and coarsely chopped
1/2 (14.5 ounce) can Italian-style stewed tomatoes, drained and diced

Instructions

  1. In a large stockpot, heat olive oil over medium heat. Stir in onion, garlic, carrots, and celery; cook until onion is transparent, about 3 minutes.
  2. Stir in chicken stock, salt, pepper, and the rest of your spices. Bring to a boil, then stir in cabbage. Simmer until cabbage wilts, about 10 minutes.
  3. Stir in tomatoes. Return to a boil, then simmer 15 to 30 minutes, stirring often.
 

Serving Suggestions

  1. Serve with bread or crackers
  2. If you want to add protein then include some thinly sliced smoked sausage into step 2 (with the cabbage)
