It’s spot prawn season in #Vancouver 😋  again!!  We got this bunch straight from the #Steveston harbour in #Richmond.  They 🦐 were so fresh that they were jumping out of the bowl before we blanched them!!

Ingredients

For the Spot Prawns:

1/2" Ginger, Peeled and cut into thin discs
2 Green Onions, Cut in half
Salt

 

For The Sides:

Fresh Red Chili, Finely Chopped (optional)
1/2 Lemon,  Juiced
1 Lime, Cut into wedges
3 Tbsp Butter
2 Tbsp Sesame Oil
1 Tsp Sweet (Dark) Soy Sauce
1 Tsp Crushed Garlic
1 Green Onion, Minced
1 Tsp Cilantro, Minced

Instructions

For the Spot Prawns:

1. Fill a large pot 3/4 full of water
2. Put the ginger and green onion into the water
3. Generously salt the water
4. Bring the pot of water to a boil
5. Drop in your spot prawns (be careful... the fresh ones might jump 😆)
6. Blanche the prawns for about a minute or until they float slightly.  They don't need long.  Remove from water and place onto a plate.

 

For the Sauces:

Lemon Butter Dipping Sauce
Place 3 tablespoons of butter in a small microwave bowl and add the juice of one lemon. Microwave on high for 25 seconds at a time until the butter is melted.  Stir in salt to taste. Serve hot right away.

Sesame and Soy Dipping Sauce
In a small bowl, mix 2 tbsp sesame oil, 1 tsp sweet soy sauce, 1 tsp crushed garlic, and 1 finely minced green onion. Let rest for 5 minutes to let the flavors develop and serve.
